Khapli wheat, also known as Emmer wheat, is an ancient grain that is nutritionally superior to modern wheat, with a lower glycemic index, higher fiber and protein content, and more vitamins, minerals, and antioxidants. It is considered easier to digest due to its lower gluten content, although it is not gluten-free. Khapli wheat is grown sustainably in the north-east regions of India.
