Adzuki Beans Himalayan
Adzuki beans are filled with iron and are believed to strengthen the heart and aid blood circulation and fatigue. It is a high mix of protein and fiber and great in maintaining blood sugar.
For cooking, these beans need to be soaked for 2 hours. Drain the water and replace with fresh, cold water for cooking. This can be placed on stove and brought to a boil in a pot with a lid or can be slow-cooked in a pressure cooker as well. If boiled in a pot, reduce to a simmer, tilting the lid slightly to allow steam to escape, and leave to cook for up to an hour, or until tender. These beans can be sprouted and cooked as well.
